Centomani 2021

Centomani (hundred-hands) is our unique Sangiovese wine. We obtain the grapes for this wine, especially from a single small vineyard. The preparation of this wine is done by destemming the grapes by hand to be sure to avoid crushing. The fermentation then starts two or three days after the harvest.  It is a non-traditional fermentation because the grapes remain intact and release the juice little by little during the fermentation process. The result is a wine where you can taste the spiciness and chocolate of the Sangiovese. Aged in French oak tonneaux for about two years, then in bottle for the year following.

Centomani è il nostro Sangiovese particolare. Le uve per questo vino provengono da un singolo piccolo vigneto. La preparazione di questo vino viene effettuata diraspando le uve a mano, La fermentazione inizia quindi due o tre giorni dopo la vendemmia. È una fermentazione non tradizionale perché l'uva rimane intatta e rilascia il succo poco a poco durante il processo di fermentazione. Il risultato è un vino in cui è possibile gustare sia la speziatura che il cioccolato. Invecchiato in tonneaux di rovere francese per circa due anni, quindi in bottiglia per l'anno successivo.
